El pisco peruano a través de las escalas geográficas

Este artículo analiza el caso de la Denominación de Origen (DO) Pisco en Perú, en el contexto de la disputa con Chile por la propiedad del destilado. A través de entrevistas y análisis documental, se examinan las distintas interpretaciones de la DO según la escala geográfica. A nivel estatal, la DO se emplea como un instrumento simbólico de afirmación nacional, con el objetivo de proyectar el Pisco como emblema exclusivo de la peruanidad. En contraste, en la región de Ica —territorio históricamente vinculado a su producción—, la DO se entiende como un medio para preservar saberes tradicionales, técnicas heredadas y valor patrimonial. El estudio revela así el carácter pluriescalar de las DO, que pueden albergar significados múltiples, superpuestos y a veces conflictivos, en función del nivel desde el cual se construyen y movilizan.
